Chocolate Fudge

  This fudge is a mixture of  textures. Simple to make yet has a rich mouthful. Ingredients 180 gms of Marie biscuits 4 tbsp cocoa powder 6 tbsp milk powder 6 tbsp sugar, powdered 1/2 cups walnuts 1/2 cup praline 5 tbsp melted unsalted butter 6-7 tbsp of warm milk To make praline Cook 1/2 cup sugar in a dry pan to  caramelize it   Pour the hot liquid on a metal plate and let it cool completely. Break with the back of a spoon into shards.   Chop the walnuts and break the biscuits into large and small pieces. Melt the butter add sugar, milk powder and cocoa powder cook for a min on low heat stirring continuously   Remove from heat and quickly mix in rest of the ingredients.   Flatten on a greased plate. Refrigerate for at least an hour. Cut into squares. Enjoy with a cup of tea or after a meal with vanilla ice cream!

Dal Ke Kebabs

This recipe requires the kebabs to be baked and not fried. In case one prefers fried, it is advised to add fresh bread crumbs to the recipe.  Ingredients 1 cup lentil (sabut masoor) 2 boiled potatoes, mashed fresh coriander 1 tbspfinely chopped ginger 1 tbsp finely chopped garlic 3 green chilies, slit lengthwise, veined and chopped finely 2 tbsp toasted sesame seeds 6 black pepper corns seeds of 2 black cardamoms 5 cloves juice of 1/2 lemon salt to taste Boil and drain the lentils.  Lightly toast the spices and grind. In a large bowl, combine all the ingredients to form a dough.   Shape into Kebabs, brush refined oil on both sides and bake in the microwave for 25 mins, flipping over once after 15 mins Enjoy with a simple onion-tomato salad and green coriander chutney.

Two Tone Pie

  This silky smooth delicate dessert melts in your mouth. A favourite with kids!  Ingredients 8 -9 Digestive biscuits  1/2 cup coffee decoction 2 eggs, separated 1 1/2 cups milk 5 tbsp cocoa powder 3 tbsp sugar 1/2 tsp vanilla essence 2 tbsp icing sugar  In a large sauce pan boil together cocoa powder and milk stirring continuously. keep aside to cool.   Line the bottom of a microwave proof dish with biscuits dunked  in coffee    In a large bowl whisk together egg whites with icing sugar until stiff.  In a separate bowl beat egg yolk and sugar until creamy.   Stir in the cooled cocoa mixture and vanilla essence. Pour this mixture over the biscuits and microwave for 5 mins until the mixture has set.   Spoon the whipped egg whites.   Microwave on the high rack for 5 mins. Enjoy hot or chilled!

Dahi Ke Kofte

  Curd is a very versatile and largely used ingredient in Indian cuisine. Why not koftas! Ingredients For the kofta- 400 gms curd 2 tbsp refined flour(maida) 5 green cardamoms 8 pepper corns salt to taste oil for frying For the gravy- 1 large onion, grated 1 large tomato, liquidised 1 tsp ginger garlic paste 1 tsp dry fenugreek leaves(kasuri methi) 1 tsp cumin powder 2 tsp coriander powder 1 tsp red chili powder 1/2 tsp turmeric powder 1 tbsp oil salt to taste     To remove the water from the curd, put curd in a kitchen tower lined sieve and place some weight on it for 1 hour.     To the hung curd, add  coarsely ground the cardamoms, peppers, flour and salt. Divide into 8 portions and shape the koftas.  Deep Fry in hot oil on a high flame until golden. keep aside.    To make gravy, heat oil  fry onion, tomato and ginger garlic paste until  the oil separates. Beetroot Halwa

Treat your loved ones with this yummy and delicious Beetroot Halwa prepared with just a few ingredients and in a jiffy!  Ingredients 2 large beetroots, steamed, peeled and grated 2 tbsp ghee 4 tbsp sugar, powdered 4 cardamoms, powdered 2 tbsp chopped cashew nuts 2 tbsp milk powder   Heat ghee and fry the beetroot for 2 mins. Mix in sugar, milk powder and cardamom powder.   Cook on low flame for 1 min. Add toasted cashew nuts. Enjoy hot after meals!

Chicken Pupusas with Cabbage Salad (Curtido)

Pupusa is the national dish of El Salvador generally accompanied by a salad called Curtido. A typical Pupusa is filled with cheese. Ingredients For Curtido- 1/2 cup shredded cabbage 1/2 cup grated carrot 1/2 cup sliced onion 1/2 cup vinegar 1 tbsp sugar 1/2 tsp salt 1 tbsp dry oregano 1 tsp chili flakes For Pupusa- 2 cups fine corn meal 1/4 tsp salt 1and 1/4 cups warm water For Filling- 200 gm chicken mince 1 small onion, diced 2 tsp ginger-garlic paste 1/2 tbsp oil 1 tsp coriander powder 1 tsp cumin powder 1 tsp chili powder salt to taste  Combine together vinegar, sugar, salt, oregano and chili flakes. stir til sugar dissolves. Pour over cabbage, carrot and onion and mix well. Cover and refrigerate til serving time.  To make the filling, heat oil and fry onions til golden. Add ginger garlic paste and fry for a min. Add the spices and give it a good mix. Add the minced chicken and salt, mix and cook covered for 10 mins. remove from heat and cool. Prepare a sof

Whole Wheat Bread (without yeast)

Baking your bread is therapeutic! But when its this simple it pure BLISS! Ingredients 2 cups wheat flour 1 cup yogurt 1/4 cup olive oil 1 tbsp each sesame seeds, poppy seeds and flax seeds 1 tbsp honey 1/4 tsp baking powder 1/2 tsp salt 1 tbsp spice mix/ herb mix(I used Za'atar) Combine all the dry ingredients in a large bowl. Add all the wet ingredients and knead into a soft dough. Let the dough rest for 10 mins. Divide it into 8 and roll each portion into a ball. With a knife mark X on the rolled dough, brush with milk and sprinkle the za'atar Bake in the microwave on low rack for 20 mins. Smear hot bread with butter. Enjoy as is or with honey drizzled on it !

Zucchini feta salad

For the salad you can use either yellow or green zucchini, ribboned or sliced. Simple yet delicious salad. Ingredients 1 medium zucchini 1/4 cup feta cheese 2 tbsp extra virgin olive oil 1 tbsp honey juice of 1/2 lemon 1 green chili finely chopped salt and pepper to taste Cut the zucchini lengthwise and slice. Crumble the feta. In a bowl prepare the dressing. Blend together oil, honey, chili, lemon juice, salt and pepper. NOTE: FETA IS A SALTY CHEESE! GO EASY ON SALT IN THE DRESSING.   Just before serving toss zucchini and feta in the dressing. Enjoy with any type of cuisine!
