Chicken Pie

Ingredients For the crust 1 ¼ cup flour 75 g cold butter, cubed ¼ tsp salt 3-4 tbsp ice cold water For Filling Breast of 1 chicken, cubed 1 ½ tbsp flour 1 tbsp thyme 1 carrrot, cubed 1 bell pepper, cubed 1 large onion, cubed Handful fresh green peas ½ cup chicken stock ½ cup milk Salt and pepper to taste 1 egg yolk In a large bowl, mix together flour and salt. Add butter. Use a fork or cookie cutter to cut the butter into the flour. The mixture should resemble fine bread crumbs. Add cold water, 1 tbsp at a time and  press  the mixture together with a rubber spatula. AVOID HANDLING THE DOUGH OR KNEADING AS HEAT FROM THE PALM WILL MELT THE BUTTER AND MALE THE CRUST LESS FLAKY.   Wrap the dough in a cling film and keep it in the fridge for at least 2 hours. Salad with mulberry vinaigrette

Ingredients For the vinaigrette ¼ cup mulberry, washed and with stems removed 1 ½ tbsp white vinegar 1 tbsp honey 1 tbsp EVOO pinch of salt For salad 1 large carrot, ribboned 1 orange, segmented 1 large cucumber, ribboned ¼ cup cottage cheese, crumbled Blend all the ingredients for the vinaigrette together to get a smooth syrupy liquid. In a bowl mix together carrot, cucumber, orange and cheese. Pour the vinaigrette over the salad.  Enjoy as a side!

Watermelon Gazpacho

  Ingredients ½ Kg watermelon 3 large tomatoes ½ long melon cucumber(Kakri) 1" piece of fresh ginger ½ tsp paprika 2 tbsp extra virgin olive oil Juice of ½ lemon Salt to taste   Cut the watermelon,cucumber, tomatoes and ginger into small pieces. Add olive oil and liquidize in a blender.   Strain and add salt, paprika and lemon juice. Cover and chill. Serve chilled garnished with fresh coriander and some olive oil.

Tomato Chutney

  Ingredients 6 large tomatoes 1 large onion 1 tbsp finely chopped garlic 1 tbsp vegitable oil 1 1/2 tsp nigella seeds 1 tbsp sugar 1 tsp(heaped) kashmiri chilli powder salt to taste   Cut tomatoes in half and microwave for 2 mins.  Remove skin and chop.   Heat oil and add nigella seeds.   Once the seeds crackle, add garlic and onion and saute untill translucent.   Add tomatoes, salt and chilli powder and cook for 5 mins. Add sugar and cook til it melts. Enjoy hot or cold with dosa, paratha, bread or as a side!

Strawberry FroYo (Frozen Yogurt)

Ingredients 400 g fresh yogurt 250 g fresh straberry 3 tbsp icing sugar Mixed berries for garnish  Drain the excess water from yogurt.   Pulse the strawbeery in a blender to get a mix of small and big pieces.   Whisk the three ingredients together.  Pour in an airtight container and freeze for  one and a half hour. Enjoy with fresh or dry berries!

Spicy Strawberry Cake

Ingredients 2 eggs ¼ cup vegetable oil ½ cup milk ½ cup honey 1 tbsp vinegar 1 tsp vanilla essence ¼ cup raw sugar ¾ cup chopped strawberry ½ tsp ground nutmeg 1 tsp ground cinnamon 1 cup flour 1 tsp baking powder ½ tsp baking soda Pinch of salt.   Whisk together eggs, oil, honey and sugar untill the sugar dissolves.  Blend in milk, vanilla essence and vinegar.   Sift in flour, salt, cinnamon, nutmeg, baking powder and baking soda. Add mix well.   Add chopped strawberry.   Pour the batter into greased dish and bake in the oven/microwave for 30  mins.   Cool before removing from the dish. Enjoy topped with whipped cream and strawberry!

Mango Raita

Ingredients 1 cup chopped ripe mango 1-2 green chillies, slit 2 tbsp chopped coriander 1 tsp sugar ¾ tsp mustard seeds Salt to taste 1 cup fresh yogurt  Pound mustard seeds and salt together.  In a bowl, mix together mango, coriander, chilli, sugar and mustard salt mix. Whisk the yogurt to make it smooth. Pour on the mango and stir. taste and adjust the salt. Refridgerate til serving time. Enjoy as a side or sauce with grilled meat! 

Chocolate Cake (eggless)

Ingredients 1 cup flour 6 tbsp unsweetened cocoa powder ½ tsp baking powder 1 tsp baking soda ½ tsp salt 1 tsp instant coffee 1 cup raw sugar ½ cup vegitable oil ½ cup milk ¼ cup fresh yogurt 1 tsp vanilla essence 1 tbsp white vinegar For Chocolate Glaze 75 g bitter chocolate 2 tbsp icing sugar ½ cup warm milk almonds Sift together flour, cocoa powder, salt , baking powder, baking soda, salt  and coffee in a bowl In a large bowl whisk together oil, milk, yogurt, vanilla essence and sugar. Whisk untill the sugar dissolves. Gently fold in the dry ingredients into this mixture.   Add vinegar and stir well.   Pour the batter into well greased cake tin or dish.   Bake in the microwave for 25 mins or untill a toothpick inserted comes out clean.   To make the chocolate glaze; place the chopped chocolate in a glass bowl and microwave for 1 min Blend in milk and icing sugar and whisk to get a...
