Chocolate Cake (eggless)


Ingredients
1 cup flour
6 tbsp unsweetened cocoa powder
½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp instant coffee
1 cup raw sugar
½ cup vegitable oil
½ cup milk
¼ cup fresh yogurt
1 tsp vanilla essence
1 tbsp white vinegar

For Chocolate Glaze
75 g bitter chocolate
2 tbsp icing sugar
½ cup warm milk

Sift together flour, cocoa powder, salt , baking powder, baking soda, salt  and coffee in a bowl

In a large bowl whisk together oil, milk, yogurt, vanilla essence and sugar. Whisk untill the sugar dissolves.


Gently fold in the dry ingredients into this mixture.
 

Add vinegar and stir well.

 Pour the batter into well greased cake tin or dish.

 Bake in the microwave for 25 mins or untill a toothpick inserted comes out clean.
 To make the chocolate glaze; place the chopped chocolate in a glass bowl and microwave for 1 min
Blend in milk and icing sugar and whisk to get a lumpfree glaze.

 Drizzle over the cooled cake. Top the glaze with chopped toasted almonds.
Enjoy as dessert or with a hot cup of tea/coffee!
