Quinoa Salad


Quinoa is the new super grain! It is a rich source of protein, dietary fiber, B vitamins and essential minerals. It is low in fat and gluten-free and considered easy to digest, Superb food indeed!
Quinoa is easily available in super markets as well as online.

Ingredients
1 cup quinoa
2 cups water
2 spring onions with leaves chopped finely
1 large tomato diced
1/4 cup pomegranate seeds
1 tbsp extra virgin olive oil
zest of one lemon (grated)
juice of half lemon
finely chopped green chili (optional)
salt pepper to taste


 Method
Step 1: boil quinoa in water, covered on a low heat. simmer for about 10 mins or until  most of the water is soaked.
Step 2: take quinoa off the flame add lemon juice, zest , olive oil and salt and mix together and keep aside covered.
Step 3: when cool mix in all the other ingredients. Serve immediately.

 Variation: After step 1 you can add any fruit and or vegetable depending on your menu, availability and MOOD.                    

Enjoy as an accompaniment or a meal!
