Basbousa (Egyptian cake)



 Basbousa is a native Egyptian and traditional Middle Eastern sweet cake.
Ingredients
1 1/2 cup Semolina (sooji)
1/2 cup flour (maida)
1/2 cup sugar
1 tsp baking powder
3/4 cup melted ghee
1/2 tsp saffron soaked in 1/2 cup warm milk
Blanched almonds
For Syrup
1 cup water
1 cup sugar
 1 tbsp rose water
a slice of lemon


 Mix together semolina, flour, sugar and baking powder.


 Blend in milk and ghee.
 Spread the batter in a greased dish and cut into diamond shapes. Bake  for 25 mins.
 Meanwhile, in a  saucepan bring water, sugar and lemon slice to a boil. take it off the heat and add rose water.
 Press in an almond in each diamond. Pour the syrup evenly over the cake and bake again for 10 minutes.

Enjoy with a cup of mint tea!
