Roasted Pumpkin Soup
Soups are very comforting and wholesome. Roasting Pumpkin pumps the flavour!
Ingredients
1 cup diced pumpkin (unpeeled)
1 medium onion
4 cloves of garlic
1 tsp dry oregano
1 tbsp olive oil
milk / water
salt and pepper for seasoning

Place all the vegetables on an aluminium foil. Drizzle olive oil, salt and pepper on it |

Cook in the air fryer or oven for 20 mins. |

Be sure to get some char marks. Blend together in a processor with water/milk. Pour in a sauce pan. Add oregano and bring it to a boil. Check and adjust salt and pepper. |
Enjoy with croutons or bruschetta!
