Pumpkin Raita


A very simple raita, but when served in hollowed out pumpkin, it becomes a main attraction.


Ingredients
1 cup grated pumpkin
1 cup curd
1 tsp oil
1 tsp cumin seeds
1 sprig curry leaves
2 green chilies, slit lengthwise 
salt and sugar to taste

Method
Step 1: microwave the grated pumpkin with a pinch of salt for 2 mins. Let it cool.
Step 2: In a bowl, whisk together curd with salt and sugar.
Step 3: Heat oil in a pan, add cumin seeds, curry leaves and chilies and saute for a min.
  
Step 4: mix together curd, pumpkin and tempering. serve cold garnished with fresh coriander leaves and a sprinkling of paprika. 

Raita can also be made from red pumpkin and bottle gourd in the same manner.
