Frittata



Frittata is an egg based Italian dish akin to omelette, made richer and thicker by the addition of a variety of vegetables, meats and cheese.


Ingredients
4 eggs
1 spring onion
1 small capsicum
4 leaves of cabbage
5 button mushrooms
1/4 cup cooked diced chicken
fresh parsley/coriander
1 tomato
1/4 cup + 1 tbsp Grated cheese
salt and pepper for seasoning
oil for frying
Finely chop all the vegetables and chicken

In a  large container crack the eggs add salt and pepper and whisk. Add all the other ingredients except 1 tbsp cheese and mix well.

Heat oil in a skillet, Pour the egg mixture evenly. Cover and cook  on medium heat til the bottom of the frittata is set and slightly brown (about 5 mins)

Slide on to a baking trey. sprinkle cheese and bake in the oven on high rack for 5 mins til the cheese is browned.

Enjoy hot with toast as breakfast or with  fresh green salad and soup as brunch, lunch or dinner.

Variation:
Grate  a large potato. Add to the hot oil and saute for a min. spread evenly and then pour the  egg  mixture over it and cook as mentioned above. with crispy potatoes at the bottom, serve the frittata upside down.
