Dum Gobi


A dish of whole baked cauliflower in a creamy spicy sauce/gravy.
It is very important to wash the cauliflower head under  running water many times. 


Ingredients
1 medium size cauliflower head
For marinade- 
1 tsp salt
2 tsp cumin powder
1 tsp red chili powder
1/2 tsp turmeric

For Sauce-
1 large onion, chopped
2 medium tomatoes, chopped
1 tsp ginger garlic paste
1 tbsp dry fenugreek leaves (kasuri methi)
1 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1/4 tsp turmeric powder
Handful of cashew nuts
Salt to taste
For topping -
2 tbsp grated cheese
boiled peas

Method
Step 1: mix together the spices for marinade


rub the spice mix on the flower head and on the underside. keep covered for 30 mins to tenderize cauliflower.

Step 2: steam cauliflower in a cooker without weight for 10 mins.

To make the sauce-

Step 1: heat oil in a pan and brown the onions
Step 2: add tomatoes and fry til dry

Step 3: add rest of the spices and fry for a min.
Step 4: cool the mixture and grind to a paste with cashews and 1/2 cup water.

Step 5: pour the sauce over the cauliflower. Sprinkle cheese and bake for 20 mins or til cheese is brown.

Step 6: sprinkle boiled peas or toasted peanuts for garnish.
Enjoy hot with roti, rice or bread.
