Carrot cake


A great way to make children eat carrots and almonds! In fact its so easy that kids can make this cake. 

Ingredients
For cake
2 eggs
1/4 cup roasted almonds, powdered
1/4 cup sugar
1/2 cup grated carrots
1/4 cup refined flour (maida) 
21/2 tbsp olive oil or any refined oil
1/2 tsp baking powder
1/4 tsp ground cinnamon
For frosting
1/2 cup plain yogurt
1 tbsp icing sugar
1/4 tsp vanilla essence

Method

Step 1: whisk together oil and sugar til creamy.


Step 2: whisk in egg one at a time.

Step 3: gently mix in flour and baking powder.

Step 4: stir in carrots

Step 5: next add almond powder and cinnamon powder.

Step 6: pour into a greased dish.

Step 7: bake in the microwave ... chocolate cake setting, Or for regular microwave, cook for four mins then place under grill on high rack for 4 mins.

To make the frosting

Step 1: put yogurt into a sieve lined with kitchen towel or a muslin cloth.
 

Step 2:Cover the  yogurt and place some weight on it. Leave for 15  mins.
Whisk together yogurt, icing sugar and vanilla essence and spread evenly on the cooled cake. Garnish with chopped almonds.
  
Enjoy as dessert or at  tea time!
