Kulthi Bean (Horse gram) Dhokla

Horse gram, kulthi bean, hurali, Madras gram is one of the lesser known beans. It is consumed as a whole seed, as sprouts, or as whole meal in India, popular especially in southern Indian states is prescribed for persons suffering from jaundice or water retention, and as part of a weight-loss diet. It is considered helpful for iron deficiencies, and is considered helpful for maintaining body temperature in the winter season.




Ingredients

1 cup Horse gram flour 
1/4 cup gram flour (besan)
1/4 tsp turmeric powder
1 +1/4 cups water
3 tbsp slightly sour curd
1 and 1/2 tsp green chili-ginger paste
1 sachet fruit salt
1 tbsp hot oil
salt and sugar to taste

For Garnish
1 tbsp refined oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
a pinch of asfoetida (hing)
1/2 tbsp white sesame seeds(til)
grated coconut
chopped fresh coriander 


Method

Step 1: In a large bowl mix all the dry ingredients except fruit salt.
Step 2: Add curd, hot oil and 1 cup water and whisk into smooth paste.
Step 3: In the 1/2 cup water stir in the fruit salt and quickly mix into the     dhokla mixture.
Step 4; Pour the mixture into greased dish and cook in the microwave or steam in the cooker(without weight) for about 20 mins on medium heat.
Step 5: heat oil in a pan, temper with the seeds and asafoetida. and pour over the prepared dhokla. garnish with fresh coconut and coriander. Enjoy with green coriander chutney as snack or part of a typical Indian meal as a side.
